Tarrytown's Castle Hotel & Spa Names New Executive Chef

TARRYTOWN, N.Y. – A Stamford resident has been named the new executive chef of culinary operations at the Equus Restaurant and the Castle Hotel & Spa in Tarrytown.

Marc Lippman has previously worked as an executive chef for Crabtree's Kittle House Restaurant in Chappaqua and South Norwalk's Ocean Drive. He opened his first restaurant, Fraîche, in Fairfield in November 2007.

“As a celebrated and multiaward-winning chef, his culinary achievements will bring a new culinary dimension to the Castle Hotel & Spa’s signature restaurant, banquet and catering facilities,” General Manager Gilbert Baeriswil said in a statement.

Lippman earned a degree in hotel management from the Rochester Institute of Technology before studying at La Varenne Ecole de Cuisine in Paris.

He plans to introduce locally sourced, Auberge-style cuisine, with influences from modern French cuisine.

“We wanted to create a new style of country cuisine: auberge, based on the idea of a simple, ecologically friendly place where you get away from it all and eat impeccably prepared food in an atmosphere of total relaxation and comfort,” Lippman said. “Auberge cuisine is the perfect blend of high-end service, cuisine and ambiance.”

The Castle Hotel & Spa is currently undergoing renovations. It will reopen May 1.
